Genmaicha Tea

Genmaicha is Japan's comfort classic: a green tea blend - usually sencha, bancha - with roasted brown rice. The rice is pan toasted to nutty caramel edges; A few kernels "pop," giving this tea its amusing other name - popcorn tea.

Tea blended with grain was meant to soften price and flavour but stuck - fresh green leaf balanced by warm, toasty cereal notes. Expect pale gold-straw infusion with mild umami, soft sweetness and tidy finish; the rice rounds off the leaf edges so the brew is friendly even if you steep a little longer.

Because it's typically everyday bancha, and the blend dilutes leaf with rice, the perceived caffeine kick is typically milder than straight sencha, making Genmaicha an easy afternoon sipper and entry point for new green-tea drinkers.

Ingredients

Green tea (sencha/bancha) with roasted brown rice. No added flavours.

Caffeine level

Light-medium (generally gentler that straight sencha because of rice dilution); moderate to light-moderate (sencha diluted with rice generally more gentle than straight senga). (This varies with leaf and steep time).

How to brew

Western style (mug/pot)

2-3 g per 250 ml.

75-80 degC water

2 minutes, then taste

Re-steep: 2-3 times; Add 30 sec each round.

Gongfu style (optional/unorthodox):

6 - 8 g per 100-120 ml.

75-80 degC water

5-10 sec for first infusion Lie down for 5-7 rounds.

Iced / cold brew

5-8 g/L cold filtered water.

Refrigerate 4-6 hrs; strain (sweet and toasty).

When to drink

Midday - late evening; Ideal for: savoury snacking, rice dishes, sushi or biscuits. Served in a fridge-cold pitcher in warm weather.
