Decaf Jasmine Green Tea
Decaf jasmine Green Tea is an evening-friendly version of classic Jasmine - without the pick-me-up. Start with tender green tea that has been CO2 decaffeinated - pressurised carbon dioxide draws out caffeine with little damage to the flavour molecules.
Note this Jasmine infusion is on the stronger side!
Once made, the finished tea is then scented with jasmine (traditionally by layering fresh blossoms with tea so leaves absorb the aroma, or by blending petals with natural jasmine essence), for lift and clarity rather than heavy perfume.
A pale straw-gold liquor in the cup has a satin texture and a crisp line. Brewed cool, it tastes dew-fresh: Night blooming jasmine, honeysuckle, citrus blossom and a soft green undertones.
It is light and refreshing over ice - more a floral spritz rather than a sugary beverage. Because it has a decaf base, it makes a great late afternoon pick or for winding down after a dinner wind-down - or for anyone who finds normal green tea a bit too stimulating. How to brew
Western style (mug/pot)
2-3 g/1 level tsp per 250 mL.
75-80 degC water
1 1/2 -2 minutes, then taste.
Re-steep: 2-3 times; Add 20-30 sec per round.
Gongfu style (gaiwan/teapot)
4-6 g/100 -120 ml.
75-80 degC water
5-10 sec for first infusion spread out over 5-7 infusions gently massage in between each infusion.
Iced / cold brew
5-8 g/L cold filtered water.
Refrigerate 4-6 hrs; strain. For a spritz, top a cold-brew concentrate with sparkling water.
When to drink
Morning through evening; best from mid-afternoon to evening; Great as a light evening drink or as a fridge-cold pitcher on warm days.
